TIP: For the best results in peeling - steam your eggs!

The water pot should be at a full, rolling boil before you add the eggs.


Adding cold eggs directly from the refrigerator to an already-boiling steamer is the recommended method for several reasons:


  • Easier Peeling The rapid temperature change helps the egg white proteins set quickly and pull away from the inner membrane, which makes the shell much easier to peel later. This method is especially useful for fresh eggs, which are notoriously difficult to peel when cooked using the traditional cold-water-start method.


  • Precise Timing Waiting for the water to boil ensures a consistent starting temperature for cooking, allowing for more precise control over the cooking time and the desired doneness of the yolk.


  • Even Steam Cooking provides a consistent, even heat, reducing the risk of an overcooked, rubbery white or an unsightly green ring around the yolk.


Once the water is boiling, place the egg filled steamer- basket, over the boiling water,(Make sure you don’t over crowd your eggs) cover the pot with a tight-fitting lid, and set your timer for the desired time ( 6 minutes for soft-boiled, 12–15 minutes for hard-boiled). Immediately transfer the cooked eggs to an ice bath or cold running water to stop the cooking process and further aid in peeling. Perfect Yum.
